My husband and I are going to Morocco for the month of June and the Fes and Essaouira festivals. I have been to Morocco once before, and as a vegetarian, ended up eating an unlimited number of boring and bland restaurant couscous and tagines, and utltimately too many pizzas.
That most vegetarian couscous/tagines are cooked in animal stock known, can anyone tell me where one can find restaurants that serve all the OTHER types of vegetable dishes known from Northern Africa, including the Jewish and berber dishes?
For those familiar with Momo's restaurant in London and his cookbook, it is obvious that there is a tradition of vegetable dishes in Northern Africa, possibly akin to the phenomenon of vegetable meze dishes in Turkey and the Middle East.
ANY and ALL restaurant recomendations, for anywhere in Morocco, as well as any riads/hotels/B&Bs that may offer cooking courses that specialise in vegetable dishes will be very, very appreciated!
