i am planning to be in oaxaca city for several weeks and am looking for an inexpensive place to stay/live. the ideal place would be more like a basic apartment than a hotel, with at least a kitchenette to cook some meals. i have found a lot of information about hotels, but not much about longer-term options.

any recommendations?

You needed to google hostels Oaxaca cocina or kitchen.

La Mochila Azul sounds like it might be good.

I've stayed in the Posada del Centro many times and like it a lot. It's a hotel, but I understand that the owner also has some appartments that are rented by the week.

Another posibility is contacting my painter friend, Humberto Batista. He's got a couple bedrooms in his studio that he rents, and guests can use the kitchen. Usually he just rents to people he knows, but you might send him an email at batista_art@yahoo.com
