Anyone got recommendations for good/interesting Paladares in Eastern Cuba? I've been to Havana and the west, but info on Trinidad, Santiago, Baracoa etc, would be much appreciated.

Baracoa has just one licensed paladar: colonial. but there are other places you can get food in cuban pesos.The quality is okay, nothing tremendous. The best food in Baracoa is at Hotel El Castillo under the watchful eyes of the maitre d' Alberto. The prices are similar to what you would pay at the Paladar. but better quality and fantastic view of the bay
