I see this has come up before, but can you get a VISA for Cuba, from the UK, without having evidence of a state hotel booking, or will they accept just an address? Also do you know if you have to put that you are in the state hotel for three days, or will one day do? Cheers

not sure about the UK so this may not be of use to you but from Ireland the process was fairly straightfowrard.

I went to the consulate with my plane ticket. I hadn't confirmed where I was staying at that stage and ended up staying in a Casa particulares for a couple of nights before moving on. No restrictions stating state hotels.
